There is a sublime meeting point between the purity of fresh milk and the complexity created by time: this is the Semi-Aged Goat Cheese by Sepi Formaggi, a Sardinian cheese that celebrates the island's cheesemaking tradition with a savoury and intense character. Produced in the heart of Sardinia, in the Campidano area of Oristano, it represents the authentic flavour of the island, made from pasteurised goat's milk sourced from selected and controlled farms in Italy. Choosing goat's milk is the first step towards a bold and unmistakable taste experience.
The production process, carried out by master cheesemakers with dedication spanning two generations, follows strict hygiene standards and uses only essential ingredients: whole goat's milk, salt and rennet. The crucial stage is the minimum ageing period of 60 days (two months), the time required for the cheese to develop its most appreciated organoleptic characteristics, transforming the paste from soft to semi-hard. This controlled ageing allows the aromas to concentrate and the texture to evolve.
The appearance of the Semi-Aged Goat Cheese is distinctive: the wheel is cylindrical with flat faces, covered by a smooth, firm rind which, as maturation progresses, develops a colour ranging from light to dark brown. Inside, the paste has a uniform straw-yellow colour, indicating proper maturation, with a sparse, evenly distributed eye formation. The texture is initially grainy and progressively becomes more crumbly, a sign of excellent ageing.
