Our forest honeydew honey is produced in the woods of the Tuscan Apennines, in the months of July-August. Honey with a dark amber color and a fruity, almost caramelized flavor is very appreciated by those who love not very sweet honeys.
The peculiarity of this honey is its origin, in fact, instead of coming from the nectar of the flowers, it comes from a sugary substance produced by the Metcalfa pruinosa (Homottero belonging to the Flatidae family; it is a grayish-colored butterfly with an almost triangular shape that infests plants in the summer months and which produces a white "sticky" fluff).
This little butterfly sprinkles the plants with a white fluff, very appetizing by bees and from which bees produce forest honeydew honey.
Excellent honey spread on bread, it also finds a very popular combination as a sweetener for coffee; in fact, it manages to remove its characteristic bitter aroma from the coffee without however adding a sweet taste, thus allowing you to fully enjoy and appreciate the flavor of the coffee.
The hives of the Tuscan Mieleria are always moved to different places, identifying the blooms, throughout the Tuscan area: from the coast to the adjacent plain, from the hills to the mountains to produce different monofloral varieties of honey: from the Mediterranean maquis produced in the woods that they distinguish the Tuscan landscape, with Acacia, Chestnut and Honeydew honey produced in the Tuscan Apennines, with Sunflower, Ivy, Sulla and Millefiori honey produced along the Tyrrhenian coast.
