Features:
The cream of prickly pears is obtained from the ripest fruit of prickly pears harvested in mid-September. The fruits, once they arrive in the transformation laboratory, are washed, freed from thorns and put to cook in the same facilities used for the production of jams.
The firing takes place under vacuum, in a relatively short time, and at a temperature of 65 degrees. For the prickly pears we add honey, juice, peel of oranges and essential oil of fennel.
For the preparation no other type of sugar is added, so it contains only fruit sugars and honey. The percentage of fruit is very high and equal to 225 grams per 100 grams of cream. To produce each jar of cream we use 630 gr of pricly pear.
The result is a very special product with strong flavor for tasty breakfasts, to accompany the cheeses and as a basis for the preparation of special ice cream.
