Sardinian red wine Cannonau Riserva, made by Cantine Pala, in Serdiana

Cannonau Riserva - Pala - Sardinian food

Features: 

Grapes: 100% Cannonau

Vineyards and method of cultivation: Is Crabilis, Serdiana

Land and position: middle hill 150/180 m above sea level. limestone and clay.

Age of the vines: 35 years

Yield: 60 quintals per hectare

Fermentation, maturation, aging: Manual harvest in the early morning hordes. Maceration on the skins for about ten days, at the end of the alcoholic fermentation followed by malolactic fermentation. Aged in French oak barrels for three thousand gallons for ten months followed by an aging in stainless steel for three months and three months in bottle before release.

Tasting notes: this Cannonau remains deep red with violet rubina, impenetrable. Notes of blackberry jam, red berries combined with hints of leather and spice. Tannin but elegant structure and body, long finish.
