Hillside vineyards in the areas of Pranu Sturru-Suelli, Costa Bancodi and Perda
Campus-Selegas, about 190 metres above sea level

Soil

Structure of limestone and clay and good sun exposure

Mediterranean, mild winters, limited rainfall, very hot and windy summers

Harvest

Manual, early in the morning

Vinification

Painstaking selection of the grapes, very light pressing with only the use of first press
wine. Cooling to 10-12 °C with natural settling. Fermentation at 16-18 °C for
about 20 days. Stored at controlled temperature with brief aging on its fine lees

Charateristic

Colour: Pale straw with greenish inflections

Nose: Intense primary aroma, delicate, lingering, excellent secondary aroma, excellent bouquet

Taste: lively, fresh, fruity, balanced, delicate, fine

Matching

Seafood starters, fregula (small balls of durum wheat) with crustaceans and bottarga, fish stews, bass with artichokes, soft-textured medium mature cheeses as Fiore Sardo Pdo
