The San Paolo Thistles grow wild in the pristine hills around Villacidro. A few hours of harvest the tops and stems are selected, washed and prepared with care by following the old Sardinian recipe.

The strong taste, they are delicious either as a starter in the kitchen to exalt and ennoble prized roast meats.

In the countryside on the island it is easy to find thistles: an important presence, which contributes the Sardinian landscape even before its cuisine. This herbaceous plant, bristling with thorns, has always been an important resource of the local gastronomy and in the old days, along with many other wild fruits of the campaign, supplemented with their substance and their own taste the diet of the people here, marked by purest frugality. Rich in iron, the thistle has also diuretic and laxative h and the popular wisdom has always known the island.
