The technical and emotional characteristics of the organic of Eucaliptus honey:
The honey of Eucaliptus is the honey most produced in Sardinia, and also obviously one of the most appreciated. The homonymous plant originates in Australia, then transplanted to Sardinia at the beginning of the 20th century to reclaim the most marshy areas; the Eucalyptus had a widespread period, until 1935, but now its implantation is reduced to regional directives favoring the innocence of indigenous and less invasive species. Originally from the Mirtaceae family, the plant also reaches 25 meters and is able to flourish in the early summer, producing a remarkable amount of nectar, of which the local bees go wild.

During the first crystallization phase the honey changes appearance, becoming clearer until it stabilizes on a tendency to ivory.

Taste and aroma of eucalyptus honey:
The aroma of this honey is really intense, very animal, very characteristic and very much remembers that of the flowers and leaves of the plant; during harvesting it is affected by how its perfume fills the whole environment with a strong aromatic intensity.
Its sweetness is less prominent than the other well-known honey and leaves a slightly salty aftertaste; the aroma remains constant, with animal notes, without any variation in intensity and vaguely resembles that of licorice, mou candy, and dried porcini mushrooms.
