Description

Caschettes - Inke - Sardinian food on sale

Stuffed sweet whose outer surface consists of a thin strip of violada dough (well kneaded with lard), semolina, cut with wheels variously jagged edges, stuffed with a filling of honey and hazelnuts, flavored with grated orange peel . The feature is caschettas is the thickness of the dough almost impalpable, translucent, who once cooked assumes a crunchy texture.


Caschettes - Inke - Traditional Sardinian sweet

In the past they were the sweets offered to the bride groom, hence the term "sweet Bride" with reference to is caschettas. The thin sheet, almost impalpable, was pulled by hand on Canneddu (rolling pin) and made dry in the sun. Even today in specialized laboratories this operation is done by hand. The dough is thin on comente papperi 'and sedation (like tissue paper).
