Fresh Goat Cheese – Sepi

The Fresco Capra Cheese by Sepi Formaggi is not simply a dairy product, but a true calling card of authentic Sardinia, a land whose strength lies in the cheesemaking tradition passed down skilfully from generation to generation in the heart of the Campidano area of Oristano. For decades, Sepi has been synonymous with quality and an inseparable connection to its territory, carefully selecting Italian and Sardinian goat’s milk to create a product distinguished by its freshness and delicacy.

This cheese represents the ultimate expression of goat-milk lightness: its production is based on a very short maturation period, no less than fifteen days, a period carefully calculated by the master cheesemakers to allow the paste to develop its characteristic softness while preserving the notes of freshly milked milk. Production begins with pasteurised goat’s milk, essential for ensuring the highest level of hygienic safety and purity of flavour, processed with the addition of only salt and rennet. The process is meticulous: the curd is handled with extreme care so as not to compromise its delicate structure, resulting in a cylindrical shape weighing approximately 700 grams or 1.2 kg in the whole-wheel version, ideal for sale and safe transport.

The appearance of Fresco Capra is extremely inviting: the rind is thin and smooth, with a colour ranging from white to a pale straw yellow, while the interior reveals a completely white paste, uniform and compact, yet at the same time soft and elastic to the touch and when cut. The absence of holes is a sign of its short and controlled maturation. From an aromatic perspective, the cheese offers a discreet, non-pungent aromatic bouquet, dominated by intense milky notes that blend with floral nuances and a subtle reminder of the herbs found in Sardinian pastures, an authentic expression of the goats’ diet.

On the palate, the flavour is sweet, a fundamental characteristic that makes it extremely pleasant and versatile, balanced by a pleasant and refreshing slightly tangy note that cleanses the palate, typical of fresh goat cheeses. This combination makes it ideal for everyday consumption or for those who prefer less intense and less mature flavours, distinguishing it from more mature Pecorino cheeses. Fresco Capra is exceptional on cheese and charcuterie boards as an appetiser, where its delicacy pairs perfectly with cured meats that are not excessively aged. In the kitchen, its versatility makes it an excellent substitute for richer or heavier cheeses: it can be cut into cubes and added to fresh summer salads, or used to finish pasta dishes with a subtle touch of acidity.

The recommended gourmet pairings range from the simple combination with multigrain bread to bolder contrasts with fig preserves or sweet-and-sour jams, enhancing its natural sweetness. As for wine, a soft Sardinian white wine that is not excessively aromatic is recommended, as well as a structured Sauvignon, capable of balancing its acidity. An important aspect to highlight is the external treatment of the rind, which, as part of standard preservation and safety procedures, is treated with preservatives (E202, E235) and colouring agent (E150d). It is essential to inform customers that the rind is not edible and must be removed before consumption, ensuring maximum transparency and consumer protection.
