Il Filato is a spun paste cheese, of medium consistency, obtained from raw milk, coming exclusively from the milking of Sardinian sheep breeds raised in free housing. This is the result of the application to sheep's milk of the product specification typical of cow's milk.
Ingredients: raw sheep's milk, veal rennet, water, Sardinian sea salt
This short-aged cheese with a sweet and delicate taste is ideal as a table cheese, roasted, fried or as an ingredient in the kitchen.
On long maturation it acquires instead a taste and a more determined taste: the dough tends to the pastry resulting look and slightly spicy.
