Climate	Warm-temperate, with mild winters and hot summers with low precipitation

Harvest	Manual cut in late August of fruiting. The harvest takes place in fractional selection from late August to early September.
Vinification	Soft pressing with a yield of 50% of the juice, fermentation 16-17å¡C after decanting of the must
Spumantizzazione	Racking and fermentation in autoclave at a temperature of 16 ° C with yeast in our selection
