Features:
The mature pecorino cheese DOP is aged a long time, up to one year. This gives the cheese a full taste, on which stands a pleasant hint of spiciness, the more noticeable the more prolonged is the seasoning. The dough can be white or slightly straw-colored, firm or slightly thinned by small holes.
The greater consistency of mature pecorino cheese makes it particularly suitable for grating, but is also excellent to be tasted in slivers, accompanied by a red wine of the body proper. It comes in the form of about 3.2 kg, protected by a crust smooth brown thicker than that of fresh cheese.
Compared to the latter it has a lower fat content, having a minimum of 35% fat in dry matter.

The mature pecorino, characterized by a remarkable lingering taste, you better pull over aged red, intense and persistent, which dampen the spiciness of the cheese made with tannins softened by the years: the versions Superior or Reserve of Cannonau di Sardegna Doc, Carignano del Sulcis and Monica.
