This pasta shape, also known as Sardinian gnocchetti, is one of the most recognisable symbols of Sardinian regional cuisine, thanks to its ability to adapt to a wide range of recipes while preserving its original identity.
Production is based on the use of durum wheat semolina grown in Sardinia, selected to ensure consistent quality and a strong connection with the Sardinian territory. The raw material undergoes stone milling, a traditional method that helps preserve the structure of the durum wheat and its natural characteristics. The dough is prepared using a cold-mixing process, avoiding aggressive processing and preserving the quality of the semolina. This approach results in a balanced pasta that remains stable during cooking and has an excellent ability to hold sauces and seasonings.
One of the product's distinctive features is the presence of San Gavino Monreale saffron, an iconic ingredient of Sardinia’s agricultural tradition. Incorporated directly into the dough, it helps create a natural and recognisable colour while strengthening the product’s connection with local gastronomic tradition.
