The Strampelli Pasta Factory produces its Mezze Maniche in the heart of Amatrice, following production specifications designed to enhance the quality of durum wheat grown in Lazio. The choice of raw material is the first step in creating an outstanding product: only high-protein durum wheat semolina is selected, capable of giving the pasta a glassy structure and a naturally golden color. The dough, obtained by slowly mixing the semolina with the pure spring water from the local sources, retains the ideal plasticity for the subsequent shaping process. The secret behind the versatility of Strampelli Mezze Maniche lies in the bronze-die extrusion process.
