Rigatoni - Strampelli

The roots of the Strampelli Pasta Factory lie in a region with a legendary gastronomic vocation: Amatrice. The Rigatoni produced at this facility are not merely a pasta shape, but the result of a production philosophy centered on enhancing the value of the regional agricultural supply chain. The selection of durum wheat grown in Lazio follows strict quality criteria, favoring varieties that give the semolina a naturally amber-yellow color and a high gluten content, which is essential for maintaining the pasta's physical structure after cooking. The water used in the dough comes from the pristine springs of the Central Apennines, a technical element that contributes to the purity of the final flavor.

The bronze-die extrusion stage is at the heart of the artisanal production of Strampelli Rigatoni. Unlike industrial production, which uses Teflon to speed up the process, bronze creates natural friction on the surface of the pasta, producing the distinctive micro-roughness that gives it its matte, artisanal appearance. This characteristic is fundamental to the interaction between pasta and sauce: the porous surface prevents the sauce from simply sliding away, allowing it to be absorbed and retained in the external grooves, enhancing the overall tasting experience. The rigatoni shape, with its generous diameter and precise ridges, is designed to provide balanced resistance to the bite, the renowned al dente texture sought after by discerning palates.

Another cornerstone of Strampelli quality is slow drying. The Rigatoni rest in dedicated drying chambers for between 24 and 48 hours, with temperatures constantly monitored to prevent them from exceeding levels that could cause the starches to "caramelize." This method, respectful of natural rhythms, prevents excessive hardening of the outer layer and degradation of the protein content, preserving the aroma of mature wheat and a fragrance that is released as soon as the pasta comes into contact with boiling water. The care devoted to this stage ensures that the rigatoni do not stick together and retain their perfect cylindrical shape even when vigorously tossed in a pan.

The history of the producer is linked to the figure of Nazareno Strampelli, the renowned geneticist who devoted his life to the study and improvement of wheat varieties.
