The Bel Sepi cheese by Sepi Formaggi represents a skilful "exception" to the pure Sardinian cheesemaking tradition, which is typically associated exclusively with sheep’s milk, introducing a delicate balance between two outstanding raw materials: sheep’s milk and cow’s milk. This combination creates a premium mixed cheese, appreciated for its sweet and aromatic flavour, suitable for a wide range of palates. The inspiration behind this blend comes from the desire to combine the distinctive character of Sardinian sheep’s milk with the softness and creaminess provided by cow’s milk, creating a unique flavour profile that is particularly appreciated as a table cheese.
Production of Bel Sepi begins with the collection of pasteurised whole milk from farms located in Sardinia, with particular reference to the pastures of the Campeda plateau, known for their rich wild flora. Careful selection of the raw material is essential to ensure the product’s authenticity and nutritional value. The Sepi master cheesemakers, custodians of ancient techniques, use modern equipment to ensure the highest levels of safety and hygiene throughout every stage of production.
After coagulation with rennet, the curd is carefully cut and worked before being moulded into cylindrical wheels with an average weight of approximately 3 kg. Once salted, the wheels undergo maturation, which lasts for a minimum of 60 days and can range from two to five months depending on the desired flavour profile. During this period, the paste, initially white, becomes homogeneous and compact and gradually takes on a straw-yellow colour, while the aromatic profile develops richer vegetal and floral notes.
Bel Sepi is a semi-aged cheese ideal for everyday enjoyment. Its texture makes it easy to slice, while its aroma, although flavourful, is never excessively spicy or strong, making it an excellent choice even for those discovering Sardinian cheeses. In the kitchen, it is extremely versatile: it is excellent on an appetiser and cheese board, paired with delicate honey or pear preserves, and can also be used to enrich salads or gourmet sandwiches.
For the best tasting experience, we recommend pairing Bel Sepi with light, fruity red wines, such as Monica di Sardegna DOC, which enhances its sweetness without overpowering its aroma. As with all Sepi cheeses, the outer rind of Bel Sepi is surface-treated with preservatives and colouring agents (including E202, E235 and E150d) to ensure shelf life and product integrity. It is essential to inform consumers that, due to these treatments, the rind is not edible and must be removed before consuming the cheese.
