THE SEMIDANO
It is a vine of which we report news from 1780. After unsuccessful attempts of production in other areas of the island, the Semidano has been recognized as a grape of unique expressiveness in the area of Mogoro, obtaining the doc. It is an unproductive vine with small, tight and medium resistance to cryptogams bunches. For the vegetative aspect it is sometimes confused with the nuragus, given the similar conformation of the sarments and leaves. Maturation takes place from the second decade of September. in late harvest, from the first decade of October, the Semidano gives white wines of great structure and complexity or fascinating sweet wines.
TASTING
Pale and bright straw yellow. It is a wine that finds its main characteristic in delicacy, which is expressed to the nose with delicate aromas of white fruit and aromatic herbs. The flavor to the taste is its characteristic, combined with the delicate acidity deriving also from the small residue of carbon dioxide of fermentative origin.
Alcohol content: 12.50% vol.
Serving temperature: 8-10 ° C.
DRINKS WELL WITH ...
A very fresh and versatile aperitif, it can also be served with pasta dishes dressed with vegetables, fish carpaccio and grilled white meat.
THE VINEYARDS OF SEMIDANO
Grapes from vineyards cultivated on sandy soils, located at 300 m, in the area of Mogoro. The climate is Mediterranean with mild winters and hot summers. Average annual rainfall 500 mm. The harvest is manual and the grapes are crushed within a few hours of harvesting. The yield per hectare is 80/90 q.
VINIFICATION AND REFINEMENT - Temperature control of fermentation and use of selected yeasts. Fermentation at low temperature and subsequent refinement of 30 days in steel on fine lees.
BOTTLING AND EVOLUTION - Sterile under nitrogen pressure. Structure wine, ennobles its characteristics in a maturation process that lasts more than a year. The optimal conditions of conservation are fundamental to appreciate the best characteristics of the wine.
