Vinification

The grapes are harvested by hand and placed in small baskets of up to 15 kg each. After a short maceration in contact, there is the de-stemming followed by a gentle pressing. The alcoholic fermentation is done in stainless steel temperature controlled. Fermentation temperature: 14-16 ° C
