Altitude and soil

Argillaceous limestone of middle of the hill, rich in texture, 200/220 m. above sea level

Vinification, maturation, aging

Brief contact with the skins, after cleaning the juice obtained from the soft pressing of selected yeasts and fermented in stainless steel tanks at a constant temperature of 15 °. After fermentation is finished, aging on the yeast continues for a few months, following the 'aging in glass

Tasting

Pale yellow color with green hues, brilliant. Intense and persistent with scents of flowers and plants, rosemary, thyme and sage. Taste with predominance of vegetal notes, warm and full of good thickness and balanced; with long lasting taste

Matching and service

Seafood dishes in general, even delicate fish meat served with light sauces, soups and seasonings in not too tasty soups - some slice of bottarga of Cabras, on some carasau leafs and some tips of extravirgin olive oil. Serve at 10-12 ° C. uncorking the bottle just before pouring
