Tino Sur Lie is a wine made from Vermentino and Chardonnay grapes - excellent wine to pair with a fregula seafood, grilled prawns, mullet bottarga and smoked tuna

Grapes	Vermentino 80%, Sauvingnon blanc 20%
Age of the vineyard	30 years
Exposition	South
Altitude and soil	Limestone, marl 200/220 m above sea level
Vinification, maturation, aging	Harvest at different times for individual varieties in the early hours of the morning with sorting in the vineyard. Brief contact with the skins, after cleaning the juice obtained from the soft pressing of selected yeasts and fermented in stainless steel tanks at a constant temperature of 15 °, finished fermentation and aging on the lees for four months continues with continuous battonnage, following the aging in glass
Tasting	Pale yellow color with green hues, brilliant. Intense and persistent bouquet with floral and vegetable, tomato leaf, sage, green apple, acacia flowers, caper and bread crust. Taste with predominance of vegetal notes, warm and full of good thickness and balanced; with long lasting taste
Matching and service	Seafood dishes in general, even delicate fish meat served with light sauces, dressing and not too tasty soups - some slice of bottarga in extra virgin olive oil, smoked swordfish and grilled shrimps. Serve at 10-12 ° C. uncorking the bottle just before pouring
