It is with great pride that we present Su Guttiau's Fregula Sarda, a treasure of Sardinian gastronomy that deserves to be rediscovered and celebrated in all its many facets. This unique pasta, officially recognised as a Traditional Agri-Food Product (PAT) of Sardinia, embodies the knowledge of a craft passed down from generation to generation, combining simple ingredients with an unparalleled depth of flavour.
Its origins lie in a millenary history, with some evidence even linking it to the cultural and commercial exchanges of the ancient Mediterranean, testifying to its fundamental role in the Sardinian diet for centuries. The distinctive feature of Fregula lies entirely in its production method, an artisan process that has remained faithful to the past: it starts with the finest durum wheat semolina, which, in a terracotta bowl called a scivedda, is slowly and carefully rubbed by hand with lukewarm water and, in some historical variations, a pinch of salt.
This circular movement, which gives the pasta its name (with an etymology debated between the verb "to rub" and the Latin ferculum, meaning "crumb"), transforms the semolina into countless small, irregular spheres with a rough surface, essential for excellent performance in the kitchen. After the fregatura and a brief resting period, the small spheres undergo a crucial process of oven toasting. This final baking gives Fregula its characteristic golden colour, its distinctive toasted and rustic flavour, and its extraordinary resistance, making it suitable for a wide variety of preparations. An important historical document attesting to its great antiquity is the Statute of the Millers of Tempio Pausania, dating back to the 14th century, which established precise rules for its production and linked it to the management of water resources.
