Ciccolella Agricultural Company embodies a historic journey that began in 1878 and is today led by Giuseppe Ciccolella, with the aim of enhancing the potential of native cultivars through the use of advanced technologies. Coppadoro is made exclusively from carefully selected Coratina olives, a variety that defines the olive oil identity of the area north of Bari, between Molfetta, Giovinazzo and Terlizzi. The meticulous care devoted to approximately 8,000 trees, managed through precision agriculture to optimise water use and minimise interventions, safeguards the health and integrity of the fruit right through to milling.
The production process is distinguished by its speed, with the olives being milled within 6 hours of harvesting to prevent unwanted fermentation. The latest-generation milling plant operates at controlled temperatures between 22 and 23°C, a technical choice designed to preserve the richness of the aromatic profile and the stability of the oil. The olive paste undergoes processing in vacuum malaxers for 10–15 minutes, a crucial stage in defining the intensity of the fruitiness. This is followed by filtration through pure cellulose panels, removing even the finest impurities to ensure olfactory and gustatory clarity and long-lasting stability.
On the palate, Coppadoro reveals an impressive structure. It is characterised by pronounced bitter and spicy notes, indicators of a high polyphenol content, balanced by clear aromas of fresh grass, artichoke and almond. The oil is stored in stainless-steel silos, maintained at a constant temperature and under a nitrogen blanket, protecting it from oxidation. To ensure maximum freshness for the consumer, bottling takes place exclusively when the order is placed, preserving the properties developed at the mill.
This monocultivar is the ideal pairing for dishes that demand personality, such as legume veloutés, sautéed chicory, orecchiette with turnip greens or grilled red meats.
