The raw material for the production of bottarga is represented by the female gonads of tuna belonging exclusively to the two fish species, such as Thunnus Albacares (yellow fin tuna) from which today almost all the bottarga production on the market is obtained, while a very small part it comes from the rare and expensive eggs of Thunnus thinnus (bluefin tuna).

The tuna Bottarga Stefano Rocca is a product of excellent quality, compact and pasty, the nose offers intense sensations and aromas of the sea and on the palate a persuasive and velvety palatability.
