The thistle honey is one of the great honey of Sardinia, certainly the one with a distinctive taste and aroma among the many Italian honeys. Its rich and aromatic component gives hints of cinnamon, a strong scent that reminds tanned leather and an aroma of wild flowers of the thistle, its flavor is sweet and strong and in the end a surprising slightly bitter aftertaste.
