The Nero Sardo wine is one of the most representative labels of Cantina di Mogoro, a winery that has interpreted the winemaking identity of Alta Marmilla with dedication and passion since 1956. This wine is a tribute to the island's flagship grape variety, Cannonau, expressed in a style that reveals all the strength and elegance of the limestone and sandy soils of central-western Sardinia. The Cannonau di Sardegna DOC designation guarantees an inseparable link with the territory, where the hilly microclimate, characterized by significant temperature variations and the constant presence of the Mistral wind, allows the grapes to reach optimal ripeness, naturally and harmoniously concentrating sugars and polyphenols.
The artisanal production begins with careful vineyard management, where the vines are cultivated according to traditional methods that respect the balance of both the plant and the soil. Manual harvesting is a fundamental stage: the bunches are carefully selected between the end of September and the first days of October, ensuring that only the finest raw material reaches the winery. The winemaking process involves prolonged maceration at controlled temperature, a technique that allows the extraction of the characteristic colour richness and aromatic complexity of Cannonau. The choice to favour ageing in stainless steel or concrete reflects the producer's desire to preserve the true character of the fruit, resulting in a genuine wine with an alcohol content of 13%, enhancing its freshness and lively drinkability.
On the palate, Nero Sardo impresses with its generous structure and distinctive character. It has a deep ruby-red colour, while the nose opens with an intense bouquet dominated by red berries, sour cherry and delicate spicy notes reminiscent of the Mediterranean maquis. On the palate, it is a warm and enveloping wine, with well-polished tannins that provide a pleasant silky texture and a persistent finish that invites another sip. An interesting detail about this wine concerns its name, Nero Sardo, a historical term that highlighted the intense colour and robustness of the red grapes grown around Mogoro, once considered among the most concentrated in the region.
When served, this Sardinian red wine expresses itself at its best in large wine glasses and at a temperature that allows its aromas to fully unfold. It is the ideal companion to traditional Sardinian cuisine, particularly roast meats, game and first courses dressed with rich, hearty meat sauces. Its complexity also makes it an excellent match for aged cheeses and long-matured Sardinian Pecorino.
