Features:

The pasta "Lorighittas", a unique product territorially limited to Morgongiori, is shaped like an earring and hard texture to the touch. The special feature of this production is mainly due to the mode of handling and processing of fresh pasta, especially in the particular dexterity and skill of people who have gained experience over time.

The ingredients (durum wheat of medium size, salt and water) are first assembled, following a long manipulation to obtain the so-called "Spaghetti" pasta, which is portioned and made ​​to wrap twice around three fingers (index , ring finger and middle finger) of the right hand, then the head, breaking and collapsing the two cut wires between the index and thumb of the same hand, with a quick movement similar to the one made ​​to give the rope to the clock, the two wires twist acquiring the shape of an elongated ring.
