Catore is the culmination of a long research on the peat that saddle & moscow has been pursuing for years now. at the grape harvest, carried out by hand in the first days of October, vinification techniques are followed to exalt the varietal characteristics with the use of minimally invasive and very respectful oenological practices: cold maceration, soft pressing, temperature-controlled fermentation

perfume - it is a broad and enveloping white, with typical hints of Mediterranean scrub, helichrysum in primis, pear and chamomile
taste - slightly bitter, decidedly savory, with a dense and fascinating, multifaceted and energetic texture
vinification - very delicate destemming-crushing followed by 24
hours of cold maceration; soft pressing; fermentation in stainless steel at a controlled temperature of 18 ° c; a small part ferments with the skins for about 100 days; a small part of the must ferments in new barriques
aging - a few months of aging in the bottle
