Assign your last name to a wine is not always a simple thing, but Dettori can describe the life that my family has always lived. Dettori is archaic wine of Sardegna. A Sardinian wine that everyone had forgotten in favor of wines are easier to drink and also to sell. Drinking Dettori is how to make a study of cultural anthropology.
Production process: The grapes were harvested by hand and transported in crates in our Refrigerated Truck Fiat 100. The grapes were de-stemmed and macerated only for ten days at a controlled temperature. Decanting and maturation took place in small concrete tanks until bottling in May / June. The wine was neither fined nor filtered or stabilized. Bottled by hand. Once bottled the wine is aged in a warehouse in a strictly controlled temperature.
The sweetness, like a generous caress of a hand worn by time, envelops the sip like a colorful shawl.
The flavor warms you, sincerely, bringing back to your heart and head everything dear that you have forgotten. Exciting and impertinent, it is capable of overwhelming.
