Features:

For its delicate flavor, deep and enveloping, with fresh and persistent aftertaste, this artichoke cream is ideal to prepare excellent appetizers, creative sandwiches or as a sauce for pasta courses and pies of unique taste.

The Sardinian artichoke comes from the Arab plant called Kharshuf indicating the edible thistle. The leaves and roots, normally discarded in the kitchen, are used for the preparation of liquors, that are assigned purifying and detoxifying properties.

The artichoke produces one of the most sought after and tasty vegetables. Its many varieties are divided into two categories: spiny or smooth. In Sardinia both keep been cultivated, but the cooking tradition prefers the thorny and violet Sardinian artichoke, with tender leaves, tasty, tapered shape and the strong and unmistakable taste.
