History and feautures:

Barigardu is a table pecorino produced in Sadegna, made of unpasteurized raw milk. There are no preservatives or additives. Rennet is veal. It is preferably eaten fresh or more seasoned, perhaps alone or accompanied by ripe figs, grapes, tomatoes or a slice of ham.

The truffle notes are full-bodied, animal, elegant and never banal.

If lightly seasoned it goes well with fruit mustard, honey, but also with pears and walnuts. The water enhances it, as does the sparkling and light red wine.

Barigardu pecorino can be accompanied by medium-aged red wines, such as Cannonau di Sardegna Doc, Rosso di Montalcino, Carignano del Sulcis and Mandrolisai.
