Fregola (Fregula) is one of the oldest typical Sardinian kind of pasta, taking shape with the water wetting the flour contained in a hollow terracotta and submitting it with your hands in a circular motion until you have small balls of raw form dough.
These small spheres are then toasted in the oven to give the browning and flavor.
The Sardinian fregola is cooked in various recipes of the island. In particular it is made with clams or mussels and grated bottarga. Also good in soup or prepared as risotto (with artichokes, mushrooms, etc.), it is generally cooked with sea sauces, like the sauce grouper, squid or recipes with the roe (bottarga).
