Saffron - Zafferano Sardo - Prodotti di Sardegna
Saffron grown and prepared in San Gavino, Medio Campidano.
It was back in the sixteenth century, when the collection of saffron in San Gavino started to take place and now it continues in the same traditional way, by hand.
Harvest takes place in the early hours of the morning to avoid the flower suffer too much damage from the weather (rain, hail, wind) over a period of time ranging from the second half of October and the first week of November.
The collection stage is very hard because it is human effort that requires that collectors are bowed for several hours, but also because of the unpredictable weather conditions that may arise at the time. The collection consists of cut flower just below the glass with a cut on the thumbnail on the index, taking care to tear or the sudden movements that may infringe the red pistils.
Once collected, the saffron is placed on the wicker baskets to be transported into the processing plant, where there is the step of cleaning the flower, also known as weeding.
