Pabassini di Sapa - Pasticceria Deligia - Prodotti di Sardegna

Throughout the island the Pabassini are one of the most popular types of sweets. It is a autumnal sweet mainly due to the presence of two ingredients available immediately after the harvest: raisins (pabassa), hence the cake itself takes its name, and sapa, occurring in many variations of this recipe.

The methods of packaging are manifold: small cone shape  (said a s'antiga, a campanileddu, a pumpullina); rhomboid in shape (in mustatzolus) or other shapes obtained with the use of small woodcuts (in the south of the island mollixeddus), like a star, heart, flower, or reproducing the initials of the name and surname of sa mere 'and knows domu (the hostess). Unprotected or icing; brushed or less with a little egg yolk or egg white in order to give gloss to the surface; studded or not colored sprinkles.

Autumnal sweet, which formed in various locations on the island, as well as nuts and fruit in season, subject to gift to children who questuavano in the name of the deceased to coincide with the day of the latter.
